One Pot Andouille Sausage & Rice Skillet

Hearty and light, a great recipe for meal planning or a weeknight dinner.

Ingredients
  • A few drizzles of olive oil
  • 1 package (4 links) Gilbert’s Andouille Chicken Sausage (cut into approx. 1/2 inch pieces)
  • 1 yellow onion (diced)
  • 1 green pepper (diced)
  • 3 garlic cloves (minced)
  • 1 and 1/3 cups vegetable broth
  • 1 and 1/3 cups rice
  • 1- 2 tbsp. tomato paste (adjust based on taste preferences)
  • 1/2 tsp Cajun spice, and salt and pepper to taste
  • Optional: freshly chopped parsley and/or chopped green onions for topping
Instructions
  1. Drizzle a bit of olive oil in a larger sized skillet/pan over medium-high heat.
  2. Add cut sausage to pan and cook until browned up a bit. We like ours with a bit of a crispy edge in this recipe, so cooked about half of the pieces a minute or so longer. Once cooked to your desired preference, remove sausage from pan and set aside.
  3. Next, to the pan add in onion and pepper. Season with salt and pepper, and cook 3-4 min, stirring as it cooks.
  4. Add in the garlic, stirring to combine and cook an additional 1-2 min.
  5. Then, pour in vegetable broth and bring to a boil.
  6. Once boiling add in rice, tomato paste and Cajun seasoning. Stir to combine.
  7. Turn heat down to medium, and cover. Continue cooking 4-5 min until rice has cooked and water has been absorbed.
  8. Remove from heat. Garnish with parsley and/or green onions as desired.
  9. Serve immediately!
